Fresh Bamboo Clams Seafood Delight
Razor clams with long, straight shells and fine ridges running the length of each one, olive-brown fading to pale tan at the open ends. The meat shows cream-white with a bright band of orange roe in the clams that lie open, and some plates also hold a handful of small round clams among them. They are shown heaped on a white plate on a pale table, across four plates on a steel bench, and again in a light sauce scattered with chopped spring onion.
The meat is sweet and firm with a clean sea finish. Steam or grill the clams briefly and dress with garlic and spring onion, or add them to a broth and let them open.
