Mackerel cut across the body into thick round sections, the skin silver with dark wavy bands and a golden sear along some edges, the cut faces showing pale pink-white flesh with a darker line down the centre. The flesh is rich and firm with a clean, savoury flavour. Pan-fry the sections skin-side down until crisp, grill them, or bake them with a little salt and lemon.
