Oysters opened on the half shell, the shells frilled and mottled black, cream and grey outside and smooth and pale within. The flesh sits plump and glossy in the shell, pale grey-cream with a darker rim. They are shown on a steel bench with a lemon wedge and a small bowl of pale sauce, on a grey drying rack beside the sink, and plated on a white dish in the kitchen.
Serve them raw on the shell with lemon or a light vinegar dressing, or grill them briefly with garlic and butter until the edges just curl.
